An ode to Taiwan's Oriental Beauty or Bai Hao Oolong.
This beautiful tea uses only tips and two leaves unlike traditional oolong which uses the bigger leaves. Hence the colour of the tea is varied up to five colours, white, yellow, brown, red, green.
This tea was grown without insecticides to encourage a common pest, the tea jassid to feed on the leaves. This leads to the plant's defensive production of monoterpene and hotrienol which gives the tea its unique flavour.
Although processed as an oolong, this tea is heavily oxidised approaching that of a hongcha. The tea is bright golden and smooth like honey water.
