Maria Teresa Salazar cultivates this coffee at her Los Pinos farm. Raised amidst coffee cultivation—her father managed three farms in Quindio, Colombia—Maria Teresa embraced this heritage. Alongside her husband, she now nurtures distinctive varietals such as Yellow Typica, Gesha, Pink Bourbon, and Ombligon on her estate.

This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled  conditions until ideal moisture content was achieved. 

The seeds are from the Ethiopian Heirloom variety. Luis was the lucky one who was able to cultivate and understand the behavior of this plant. The results after many years of monitoring and experimenting are interesting. The cherry is elongated and has a belly button shape on the base of the fruit. The “belly button” term can be translated as Ombligon in Spanish, which is why Luis Anibal also refers to this variety as Ombligon. 


Roast Level
Lightly roasted, we adopted very careful roasting for this coffee, restricting the roast momentum (technically called ROR) towards the end to preserve flavour transparency, the brightness and the sweetness. We worked hard to avoid a crash of flavour immediately upon swallowing the coffee, and that there will be a long lingering afterflavour in tandem with the flavour transparency.
