This coffee is produced by selected farms in the Popayan Region. Coffee milled in Popayan and shipped to Caldas, Colombia to be decaffeinated.
The decaffeination process for this coffee is unique. The caffeine is extracted from the coffee using a natural by-product of sugarcane and water. This process avoids excessive temperatures seen in other methods and leaves a coffee with enhanced sweetness which roasts and taste much more like original coffee.
The main advantage of course is the whole process is being done within Colombia, saving more costs for the producers and end customers.
