Specialty Association Coffee (SCA) Certified Courses

  • Introduction to Coffee

    Learn about coffee’s journey from its origins in Ethiopia to the major commodity it is today. From growing the cherries through grading, roasting, and brewing, this module provides an overview of the coffee value chain.

  • Barista Skills Module (Foundation and Intermediate)

    Learn the practical skills you need behind the espresso bar: learn how to set your grinder, milk techniques and latte art, health and safety, customer service, and basic business practices.

  • Brewing Module (Foundation and Intermediate)
    Learn about the variety of methods for brewing coffee and the brewing variables that affect quality. The Brewing module provides hands-on learning on grind profiles, brewing methods, measuring coffee strength and charting a coffee’s extraction.

  • Green Coffee Module (Foundation)
    Learn about the key concepts surrounding green coffee: production, processing, grading, shipping, storage, arrival at destination, as well as coffee contracts and portfolio management.

  • Roasting Module (Foundation)
    Learn about the roasting process, including roast cycle, roast levels, identifying defects, the physical changes that beans undergo during the roasting process, as well as work space management and lean production.

  • Tea Taster Course
    • Learn about teas journey from its origins in China to the major commodity it is today. From growing the plant through processing and brewing, this module provides an overview of the tea value chain.
    • Science behind the water quality for tea, tasting and smelling.
    • Understand the various process of brewing tea and how it affects the flavour.
    • Tea brewing via various methods
    • Differentiate different tea classes, specialty and commercial tea
    • Theory of tea pairing and application.
    • Construct own flavour wheel.

The Whisky Ambassador

The UK’s only accredited training course about Whisky. It is a fun and interactive training programme designed specifically for the Licensed Trade, giving staff the knowledge, skills and confidence to communicate with customers about Scotland’s national drink. This leads to better customer experience and improves sales revenue.


Sake Sommelier Association (SSA) Certified Courses

  • Introduction to Sake Professional (Level 1)

    This is an entry level Sake qualification which covers history, production process & culture of Sake.

    The course offers a unique opportunity for enthusiasts to advance their understanding of Sake through basic theory & practical. Participants will get to try various styles of Sake & grasp the essence of Japan’s complex & enigmatic drink.

    This course also helps trade personal gain basic Sake selection skills in shops and restaurants.

  • Certified Sake Professional (Level 2)

    This course is an advanced-level qualification in Sake offered by the Sake Sommelier Academy. It is ideal for candidates currently employed in the F&B / hospitality industry. It gives the candidate the essential knowledge and skills to advise and provide appropriate Sake service.

    The candidate will:

    • understand the history, ingredients and production methods for Sake
    • be able to understand and interpret Sake labels
    • be able to provide appropriate Sake service

 The Wine & Spirit Education Trust (WSET) Program

  • WSET Level 1 Award in Sake
    For individuals new to the subject, this qualification offers a hands-on introduction to the world of sake. You’ll explore the main styles and types of sake through sight, smell and taste to develop an understanding of the key factors affecting flavours and aromas. Upon successful completion you will receive a WSET certificate and lapel pin.


 The Wine & Spirit Education Trust (WSET) Program

  • WSET Level 1 Award in Wines
    For individuals new to wine study, this qualification provides a hands-on introduction to the world of wine. You’ll explore the main types and styles of wine through sight, smell, and taste, while also gaining the basic skills to describe wines accurately, and make food and wine pairings.

  • WSET Level 2 Award in Wines & Spirit
    For individuals seeking a core understanding of wines, this qualification explores the major grape varieties and important wine regions in which they are grown. You’ll learn about the styles of wines produced from these grapes as well as key classifications and labeling terminology. A basic overview of the key categories of spirits and liqueurs will also be provided.

  • WSET Level 3 Award in Wines

    The WSET Level 3 Award in Wines is designed to give a thorough understanding of the factors that
    account for the style, quality and price of the principal still, sparkling and fortified wines of the world. The qualification will assist those who are required to make professional evaluations of wines with regards to their style, quality and price. The qualification provides the in-depth product knowledge required to underpin job skills and competencies, for example in product selection in the retail and hospitality sectors.

    Successful candidates will be able to describe the characteristics of the principal wines of the world and give information on the key factors influencing style, quality and price. They will consequently be in a position to advise management, to answer customer queries authoritatively, and to make informed selections of wines in a variety of situations
