Maragesha is a natural hybrid between two renowned coffee varieties: Gesha -and Maragogype. This cross occurred spontaneously at Luis Anibal’s farm, Finca Villa Betulia, in 2017. Gesha, originally from Ethiopia, is celebrated for its exceptional cup quality, often featuring floral, jasmine, and tropical fruit notes, along with a delicate acidity. Maragogype, often referred to as the "elephant bean" due to its unusually large bean size, is a mutation of Typica and is known for its mild, smooth cup profile with subtle sweetness and low acidity. 

 

Luis Anibal first discovered Maragesha on his farm, Villa Betulia, in 2017 when he noticed a handful of trees producing cherries that were distinctly different from their neighbours. He separated the cherries and began the meticulous process of cultivating this new variety. The Maragesha variety combines the best traits of its Gesha and Maragogype.  This unique combination makes Maragesha a standout variety, offering both exceptional cup quality and visual appeal. 

 

Luis Anibal’s discovery and cultivation of Maragesha highlight the potential of natural hybridization in coffee farming. By carefully selecting and propagating this new variety, he has contributed to the diversity of coffee genetics, which is crucial for the sustainability and resilience of coffee production in the face of challenges like climate change and disease. Maragesha represents an exciting addition to the specialty coffee world.  

Jardines del Edén is Cofinet's flagship farm, where they focus on growing exotic coffee varieties of competition grade and trying out experimental processing methods. We visited the beautiful farm in 2019 during our visit to Cofinet farms including Santa Monica. Coffee harvesting is done by hand, afterwhich they are transported to La Pradera wet mill for processing. This station is also the HQ of Cofinet, established by Jairo Arcila's two sons - Carlos and Felipe Arcila. La Pradera processes coffee from their own farms and selected farms not owed by them for processing or marketing under the Cofinet brand.

We are roasting this coffee light.


Brew Level

We are brewing this coffee with V60 using Abaca filter paper, in 2 parts. The grind is finer, around 500um, brewed using 2 temperatures. Following 1:13 ratio, we are brewing 15g of coffee to 200ml of water, as follows:

0th sec - Pour 100g of 96°C water slowly, in 20sec
45th sec - Add another 100g of 86°C water slowing using the same pouring speed
1 min 45th sec - Water drains through and brewing complete
