Ethiopia is always a romantic dream for coffee lovers. If this is the motherland for arabica coffee, perhaps the Oromia region (or more correctly, regional state) is the core of this homeland. Oromia is the homeland of the Oromo people who are the earliest inhabitants of the motherland 7,000 years ago based on various research. Within Oromia, Guji has been considered by many Oromo people as the ancestral heartland where the Oromo culture flourished.
This lot is sourced from Gigesa village in Ethiopia's renowned Oromia region, this exceptional coffee is cultivated by a community of 500 dedicated producers. Each of these smallholder farmers typically manages an average of one hectare of land, where they meticulously grow heirloom coffee varieties using organic practices. Their commitment to quality not only yields outstanding coffee but also plays a vital role in the economic prosperity of the region.
Once the coffee arrives at the station, pre-sorting of the cherries is performed.
The team carefully hand-sorts them, selecting only perfectly ripe ones and removing any unripe, overripe, or foreign material. Afterwards, the cherries are floated in water. Low-density, imperfect coffee is removed as it floats, while healthy, dense beans sink to the bottom.
The cherries then undergo a 12-hour soaking in water. This technique helps to initiate sugar reactions inside the cherry, which enhances the taste, giving it a honey-like quality.
