Brazilian coffees often give an impression of simple, dark roasted coffees used for blends. 
Located in the north east part of the state of Sao Paulo in southern Brazil, the Mogiana region runs on the edge of the state alongside the state of Minas Gerais. Known as the Brazilian highlands, the rolling hills and uneven terrain produces consistently sweet and well structured coffee. This is one of the oldest growing region in Brazil, with history dating back to 1800s. The region is named after the Companhia Mogiana, who owned the railways that traversed the mountainous coffee regions. The train line was known as “The Coffee Train” for its role in facilitating early coffee production and exportation.  

We purchase this coffee from Olam which selects lots from individual farms for processing, growing the most common varieties like Acaia, Caturra, Catuai, Mundo Novo and Icatu. The production area is an impressive 4,200 ha, with average farm size of 70 ha. This coffee undergoes natural process, which is the most common method in Brazil. The coffee is mechanically harvested to manage such a large farm. Olam has selected greens ranging from 14/15 to 17/18 for this coffee, giving it a fruity and roasted character at the same time.

Roast Level
We have roasted this coffee to medium light with a development time of close to 2 min but ending at a lower temperature than what is expected for a Brazilian coffee. Given the wide spread of bean sizes, we carefully thread between juicy sweetness of larger beans and the risk of over-roasting the smaller beans.

Brew Flavour
We are brewing this coffee on the filter using 16g to 240ml of 90°C water at 750 µm grind size, using Timemore Crystal Eye and Kalita Wave 185 paper. The coffee grounds smell like a classic Brazil - sugar browning notes. In the cup, the flavour is straight forward when hot, but turning more complex when less hot. It has medium intensities for sweetness and bitterness, and mild acidity, a smooth mouthfeel and a medium-light weight, presenting notes of vanilla and other sugar browning notes of nuts, followed by milky notes, and then berries and other citrus notes as the coffee cools. It leaves a clean note of sugar browning and fruity sweetness - we even detected hints of strawberries and stonefruits.

On the espresso on a semi-automatic machine or even a commercial machine, its sweetness takes centrestage, magnifying the vanilla and milky aromas, on a smooth mouthfeel and medium weight. Balanced, mild and smooth, it is a familiar cup good for your home or your office pantry.
