This ice cream is made from the world's single most sought-after coffee varietal-the Geisha. Our geisha coffee beans were grown in the Chanchamayo mountains of Peru, harvested, and processed by Black Honey. They have a subtle, almost fruity sweetness and an aroma that recalls wild orchids.
To coax the maximum flavour from these rare beans, the chefs at Tom's Palette has chosen a cold infusion process. Our coffee is immersed in the custard for 48 hours before the mixture is churned to create fresh gelato.
