El Jilguero was founded in 2006 and named in honor of the natural reserve near the cooperative's farms. In particular, El Jilguero pays homage to the birds of the reserve, who's beautiful song spiritually resonates with the farmers.
The cooperative members are constantly working to improve quality and continue to grow in coffee growing. The small cooperative works very family and tries to support the individual small farmers as much as possible. This way, farmers who have problems with insect infestation are helped, children are provided with textbooks, and new seeds are distributed to members.
Under these conditions, a very sustainable produced coffee, which is very sweet by the honey-processing, at the same time has a pleasant sparkling acidity and is all in all very balanced.
