Don Luis Anibal Calderon has made a name for himself producing coffees from special fermentation methods that exhibit clean flavours with the absence of over-fermentated sourness that overshadows such methods in recent years.

Where this coffee is cultivated, Luis Annibal lives with his wife and 3 sons. He first purchased the land in 2005 and began planting specialty coffee varieties in 2012, starting with 5,000 Geisha trees on 5% of his farm. Ten years later, it was apparent to Luis Anibal that returns from cultivating Geisha were worth the extra effort. He decided to dedicate his entire farm to more delicate and rare specialty varieties,. Today, Villa Betulia is planted with a wide range of specialty varieties including Red, Pink and Yellow Geisha, Tabi, Java, Sidra, Striped Bourbon, Maragogype, Pacamara,  Marageisha and several varieties of dwarf Geisha.

Typica are a mother plant for many coffee varietals and they are known for their low yield yet great taste. Our Pink Typical - a field mutation - is a microlot. Cherries were strictly picked with the same level of ripeness, then fermented for 48 hours as full cherries under a CO2 filled environment. Cherries were pulped and dry fermented quickly for 30 hours. Subsequently they are washed and placed on raised beds until ideal moisture is achieved.

Roast Level
We have roasted this coffee to medium light with near to 2 min development. We aim to create a flavour profile that focuses on sweetness and a round, heavier body that commensurate with its process method.

Brew Flavour
We are brewing this coffee using 15g to 250ml of 93°C water at 800 µm grind size. We are using the Timemore B75 and Kalita Wave 185 paper. The grounds smell of a breakfast cereal bowl of yoghurt, nuts and banana. When hot, the coffee has notes of guava, fig and lime, turning to honey on a smooth and sweet texture, and ending with grapefruit peel and lulo, with a hint of nutmeg and dark chocolate. There is a soft juiciness that invites you to chew as you are drinking. Afterflavour is clean, light and smooth.

0-15 sec: Pour 50g of water
45-85 sec: Add 150g
90-100 sec: Add 50g
